Cooking with Deidre - Gluten Free Orange Cake

Gluten Free Orange Cake

 

Ingredients:

3 Medium Sized Oranges                         5 eggs
350g Almond Meal                                    1 ½ ts. Baking Powder
220g Caster Sugar
 
Place the oranges into a pot with cold water and bring to boil.  Simmer for 40 minutes or until oranges are soft.
Remove from pot and allow to cool.  Cut the ends off the oranges and remove pith and seeds.  Cut into small pieces and blend until smooth.  Leave a few slightly larger pieces if you like a bit of texture to your cake.
In a bowl mix the sugar, baking powder, almond meal and eggs.  Mix till smooth and place in a lined cake tin.
Bake at 170 degrees for 50-70 minutes depending on your oven.
Let stand for 5 minutes before turning onto a cooling rack.
Dust with icing sugar and serve with cream or yogurt.


Tip:

You can add a tablespoon of poppy seeds to this recipe to mix it up a little.
You might choose to use a butter icing instead of icing sugar.
